Ingredients
- 1.1 lbs fusilli
- 14 oz whole peeled cherry tomatoes
- 1 clove onion
- basil
- Parmesan (grated)
- extra virgin olive oil
- salt
Preparation of Fusilli with Peeled Cherry Tomatoes
Fill a pot with water and bring it to heat for cooking the pasta.
Chop the onion clove and place it in a large pan or wok with a base of extra virgin olive oil.
Let the onion turn golden and add the whole peeled cherry tomatoes.Cover the pan with a lid and let everything cook on high heat for about ten minutes, checking occasionally and smashing the tomatoes with a spoon when they become softer.
At the end of the cooking time, adjust the salt, turn off the heat and add a few fresh basil leaves, closing the sauce with the lid again.
Cook the fusilli until al dente, drain them and toss them in the sauce for a few minutes, thoroughly stirring with grated cheese to taste.
Turn off the heat and serve your fusilli with peeled cherry tomatoes immediately, piping hot.
