Ingredients

  • 4 zucchini
  • 1 oz pecorino (grated)
  • 2 eggs
  • 1 cup breadcrumbs
  • oil (for frying)
  • salt

Preparation of Zucchini Slices with Pecorino

  • Wash the zucchini, trim them and slice them.
    Place them in a colander with a pinch of salt and let them rest for about twenty minutes to drain the excess moisture.

  • Quickly rinse them under running water to remove the salt and dry them with a clean cloth.
    Beat the eggs in a bowl.
    In a large plate, mix the cheese with the breadcrumbs.

  • Dip the zucchini slices first in the eggs, then in the breading, coating them on all sides.
    In a high-sided pan, heat plenty of oil and fry a few slices at a time, turning them on all sides, until golden: this will take a few minutes.
    Remove them with a slotted spoon or skimmer and drain the excess oil on kitchen paper or frying paper.
    Serve immediately, hot, your zucchini slices with pecorino.
