Ingredients
- 1.1 lbs potatoes
- 8.8 oz pickled vegetables (click for the homemade recipe)
- 5.6 oz tuna in oil
- green olives (pitted)
- extra virgin olive oil
- salt
Preparation of Potato and Pickled Vegetable Salad
Wash the potatoes, place them in a pot, and cover with water.
Bring to a boil and cook for twenty minutes, then drain and let them cool slightly before peeling and cutting into chunks.Let them cool completely, then gather them in a bowl and add the well-drained pickled vegetables.
Drain the tuna from its conservation oil and add it to the bowl with a handful of pitted green olives.Adjust with salt and dress with extra virgin olive oil.
Mix and serve your potato and pickled vegetable salad immediately.
