Pan Bread Cooked in a Skillet

Pan bread cooked in a skillet is a soft leavened bread, simple to make and very delicious.

Ingredients

  • 3 1/4 cups all-purpose flour (plus more for working the dough)
  • 1/2 tsp dry yeast
  • 1 cup water (warm)
  • 3.5 tbsp milk
  • Half tsp sugar
  • 3.5 tbsp extra virgin olive oil
  • 1 tsp lemon juice
  • 1 tsp salt

Preparation of Pan Bread Cooked in a Skillet

  • In a small bowl, place the milk and lemon juice, mix and let it sit for ten minutes until the milk curdles.
    In a large bowl, mix the flour, dry yeast, and sugar.
    Make a well in the center and pour in the extra virgin olive oil, warm water, and curdled milk and start mixing with a fork, gradually incorporating the flour with circular movements until the liquids are well absorbed.
    Add the salt and incorporate it into the mixture.

  • Transfer it to a floured work surface and knead firmly until you have a soft, smooth, homogeneous, and non-sticky dough (add a little more flour if necessary, depending on the absorbency of the flour).
    Oil a bowl, place the dough in it, and cover with plastic wrap.
    Let rise in a warm, draft-free place until it doubles in volume (about three hours).

  • Take the dough and work it on a work surface.
    Divide it into eight portions.
    Heat a griddle or grill pan over low heat.
    Roll out the portions until they form discs about 0.4 inches thick.
    Cook for two minutes on each side over medium heat.
