Country-style New Potatoes

Country-style new potatoes are a tasty side dish that is very easy to prepare.

Ingredients

  • 28 oz new potatoes
  • 1 1/3 cups cherry tomatoes
  • 2 red onions
  • oregano
  • extra virgin olive oil
  • salt
  • pepper

Preparation of country-style new potatoes

  • Wash the potatoes thoroughly to remove all dirt.
    Boil them for five minutes, then drain them well.
    Clean the onions and cut them into wedges.

  • Wash the cherry tomatoes and cut them in half.
    In a large pan, heat some extra virgin olive oil and add the onion wedges.
    Cook for a few minutes, then add the tomatoes and potatoes, season with salt, pepper, and a little dried oregano.

  • Stir to mix the flavors and cook over medium-high heat, stirring occasionally, until the potatoes are well cooked and can be pierced with a toothpick.
    Turn off the heat and serve your country-style new potatoes immediately, piping hot.
