Grilled zucchini with salmon is a delightful finger food appetizer that’s simple to prepare.

Ingredients
- 2 zucchini (round)
- 5.3 oz smoked salmon
- Half red onion
- lemon juice (from half a lemon)
- extra virgin olive oil
- parsley
Preparation of Grilled Zucchini with Salmon
Heat a grill or griddle.
Meanwhile, wash the zucchini, trim them, and slice them about 0.5 inches thick.
Brush them with a little extra virgin olive oil on all sides.Grill them on the hot grill for a few minutes on each side.
Set them aside while you thinly slice the red onion.
Flake the salmon.
Place the grilled zucchini slices on a plate.
Top with some pieces of salmon and a slice of onion.
Finely chop the parsley and place it in a small bowl.Add two tablespoons of extra virgin olive oil and the juice of half a lemon to the chopped parsley and emulsify everything by beating with a fork.
Dress the grilled zucchini with salmon with a teaspoon of the prepared mixture.
Let them rest in the fridge for half an hour before serving.
