Tomato mayonnaise is a tasty condiment, easy to make and really delightful.
With only three simple ingredients, no eggs, perfect as a dressing for fries, roasts, canapés, sandwiches, burgers, or whatever your imagination suggests, it has a very simple preparation process and will pleasantly surprise you with its taste.

Ingredients
- 5 oz red tomatoes (firm and fleshy)
- 1 tsp red wine vinegar
- 1/2 cup sunflower oil
Preparation of Tomato Mayonnaise
Wash the tomatoes, dry them, and peel them.
Cut them into wedges, remove the seeds, and pat them dry with kitchen paper.
Place them in a sieve set over a bowl, salt them, and let them rest for at least an hour for them to lose the vegetation water.
After the resting time, pat the tomato wedges again with kitchen paper and place them in a tall glass (perfect for the immersion blender).
Add the red wine vinegar and blend them with the immersion blender until smooth and homogeneous, then adjust the salt.
Gradually add the oil, keeping the immersion blender running with vertical movements to incorporate air and “whip” your tomato mayonnaise, until a creamy and firm consistency is obtained.
Transfer it to a clean airtight container or a sterilized glass jar with a lid and store in the refrigerator until ready to use.
