Ingredients
- 4 tomatoes (large vine)
- 5.3 oz smoked salmon
- Half red onion (small)
- lemon juice (from half a lemon)
- parsley
- extra virgin olive oil
Preparation of Tomato and Salmon Appetizers
Clean the onion and chop it into pieces.
Put it in a bowl, cover it with cold water, and let it rest for ten minutes.Clean a bunch of parsley with dampened kitchen paper and chop it finely.
In a small bowl, put the lemon juice and some extra virgin olive oil and whisk everything with a fork to prepare an emulsion.Wash the tomatoes, dry them, and cut them into slices about half an inch thick, then arrange them on a serving plate.
Place a piece of smoked salmon on each tomato slice, some onion, and sprinkle with chopped parsley and a teaspoon of the prepared emulsion.
Let your tomato and salmon appetizers rest in the fridge for at least half an hour before serving.
