Thanks to the Air Fryer these Broccoli Cakes are crispy on the outside, soft inside, and even more delicious with the cheese inserted in the center. A clever solution to make kids love broccoli and to bring vegetables to the table in a tasty way. It takes very little: a few genuine ingredients, a bowl, and a few minutes of cooking to get golden cakes that whet the appetite.
As an alternative to the Air Fryer, you can choose to bake them in the oven, still obtaining a tasty and light result. As always, you can find the instructions with times and degrees of cooking at the end of the recipe.

Ingredients for 5 broccoli cakes
- 17.6 oz broccoli
- 1 egg (medium)
- 2 tbsp breadcrumbs
- 1 clove garlic
- 1 fresh chili pepper (or dried)
- 1 tsp anchovy (paste)
- 1.4 oz Grana Padano grated (or Parmesan)
- 1.4 oz asiago
- to taste salt and pepper
- to taste breadcrumbs (to coat the molds and for the top)
- to taste extra virgin olive oil

Steps
How to prepare Broccoli Cakes in Air Fryer
Steaming (me) in Ninja Multicooker 12 in 1: after thoroughly washing the broccoli and removing tough stems and leaves, place them on the combi tray rack after filling it with 1 liter of water
Set the switch to combi cooker mode (left side) and set steam program for 15 minutes (test doneness by piercing the broccoli with a fork; they should be tender)
Cooking in a pot: bring salted water to a boil, add the broccoli and boil until they are tender
Drain them well and let them cool for a few minutes
Place them in a bowl and mash them with a fork. Now add the breadcrumbs, egg, salt, pepper, grated garlic, sliced or chopped chili pepper, and the teaspoon of anchovy paste
Also add the grated Grana or Parmesan
Mix until obtaining a firm mixture.
Coat the molds with breadcrumbs after oiling or buttering them
Take part of the mixture, place it inside the mold, and press lightly, helping with the back of a spoon, forming a cavity where you will insert cubes of Asiago
Cover all the molds with the remaining mixture. Sprinkle the top with breadcrumbs and a drizzle of extra virgin olive oil. Transfer them onto the grill or tray of the air fryer
Now start the air fry program at 340°F for 15 minutes or until they become golden and crispy
Remove the drawer or tray and let them cool for a few minutes to avoid burning yourself. With a blade or knife, gently release the edges and flip them onto a plate
Here they are, ready to be enjoyed! Crispy on the outside, soft and gooey inside🤩

You can freeze them either raw or cooked for up to 2 months.

The Cakes can be prepared in advance, cooked when needed, or cooked and reheated later in a few minutes.
Blend them if you prefer a smoother texture more suitable for children. Drain them well before cooking, especially if you’ve opted for pot cooking, as broccoli absorbs a lot of water.
Variations of Broccoli Cakes
The anchovy paste can be replaced with some finely chopped fillets or omitted.
The fresh chili pepper can be replaced with dried or powdered chile.
