Ingredients
- 8 slices sandwich bread (square)
- 3.5 oz canned tuna in oil
- 2 tbsps mayonnaise
- 8 cherry tomatoes
- 8 green olives (pitted)
- arugula
Preparation of Bread Baskets for Tuna Sandwiches
On the work surface, flatten the bread slices with a rolling pin to make them more elastic. Use a pastry cutter with a diameter of 4 inches to cut a disc from each slice.
Gently place the disc into a muffin cup to avoid breaking it, then press it down on the bottom and sides to form a basket shape.
Place the muffin cups in the refrigerator for at least an hour.Shortly before serving your bread baskets for tuna sandwiches, drain the tuna from its preservation oil and place it in a bowl, add the mayonnaise and mix thoroughly until you have a homogeneous mixture.
Wash and dry the cherry tomatoes, then cut them into quarters.Place a base of arugula leaves in each basket, arrange four tomato wedges, and a generous teaspoon of the tuna mixture. Top each basket with a pitted olive and serve.
