Paradise Cookie Cake

The paradise cookie cake is a no-bake cold cake, easy to make and very delicious.

Dry cookies, like Petit or Oro Saiwa or similar, a delicate cream of whipped cream and condensed milk scented with vanilla, for a cold cake that can be stored in the refrigerator, or even freezer, where it becomes a kind of ice cream cake, perfect for summer.

Ingredients

  • 8 oz dry cookies (like Petit, Oro Saiwa, etc)
  • 1 cup whipping cream
  • 5.5 oz condensed milk (click for the easy and cheap recipe to make it at home)
  • milk
  • 1 tsp vanilla extract (or the seeds of a vanilla pod)

Preparation of the Paradise Cookie Cake

  • Whip the well-chilled cream from the refrigerator with electric beaters until stiff peaks form.

    Add the vanilla extract and then the condensed milk slowly, continuing to use the beaters, until you obtain a fluffy and homogeneous mixture, with the consistency of whipped cream.

    Put the mixture in the refrigerator until ready to use.

  • Line an 18, 20 cm (7, 8 inches) round springform pan with a sheet of parchment paper.

    Put some cold milk in a small bowl.

    Form a base layer in the cake pan with cookies quickly dipped in the milk, breaking them if necessary to fill all spaces.

    Quickly dip more cookies in the milk and place them along the edge of the cake pan, with the flatter side facing inward.

  • Take the cream from the refrigerator and use a quarter of it to create a layer on the base of cookies, spreading it gently to avoid breaking the cookies (for ease you can put the cream in a pastry bag with a small round tip, place it on the cookies and then gently level it with a spatula on the surface).

  • Form another layer of cookies dipped in milk on the cream, then another layer of cream and so on, until finishing with a layer of cream (you should get 4 layers of cream and 4 of cookies including the cake base).

    Level the surface, cover the cake pan with a sheet of aluminum foil and put your paradise cookie cake in the refrigerator for at least three hours (or in the freezer for half the time) before serving.
