Ingredients
- 12.7 oz pasta
- 10.6 oz burrata
- 10.6 oz cherry tomatoes
- 1 clove garlic
- basil
- extra virgin olive oil
- salt
Preparation of Burrata and Cherry Tomato Pasta
Wash the cherry tomatoes and cut them into wedges.
Peel the garlic clove and sauté it in a wide pan with some extra virgin olive oil.
Add the cherry tomatoes cut into wedges, stir well, season with salt, and let them cook for ten minutes.
Cut the burrata into pieces and put it in a blender with a drizzle of extra virgin olive oil and a pinch of salt, then blend until you obtain a cream.
Cook the pasta in plenty of salted boiling water and drain it al dente, keeping aside some of the cooking water.
Place it in a bowl, add a drizzle of extra virgin olive oil, and mix well.
Also, add 3/4 of the burrata cream (possibly thinned with a bit of the pasta cooking water if it’s too thick), mix, and distribute the pasta on serving plates.
Add a bit of the prepared cherry tomatoes, some fresh basil leaves, and a few tablespoons of the leftover burrata cream.
Serve your burrata and cherry tomato pasta immediately.
