Ingredients
- 2 round zucchinis
- 9 oz mozzarella for pizza (grated)
- 1 cup tomato sauce
- breadcrumbs
- basil
- extra virgin olive oil
- salt
Preparation of Pocket Zucchini Pizzaiola Style
Wash the zucchinis well, trim them, and cut them into horizontal slices about half an inch thick. Brush each slice on both sides with a bit of extra virgin olive oil and coat them in breadcrumbs, then place them on a baking sheet lined with parchment paper without overlapping them. Season each slice with a pinch of salt and bake in a preheated oven at 350°F in static mode for ten minutes.
Meanwhile, in a small bowl, season the tomato sauce with a drizzle of extra virgin olive oil, salt, and some basil leaves torn by hand.
After the ten minutes of baking, take the tray out and put a tablespoon of the seasoned tomato sauce on each slice, spreading it over the entire slice with the back of the spoon, and place some mozzarella on only half of the slice, folding the half without mozzarella over the stuffed one and securing each folded slice with toothpicks.Put the tray back in the oven for a few more minutes to melt the mozzarella.
Serve your pocket zucchini pizzaiola style immediately, very hot.
