Salmon and Fennel Carpaccio

Salmon and fennel carpaccio is a delicious cold dish with an irresistible flavor, easy and quick to prepare.

Smoked salmon, fennel, and a few other ingredients make for a perfect dish for any occasion, whether as an appetizer, main course, or second course, it’s very simple to make.

Ingredients

  • 7 oz smoked salmon
  • 1 fennel (large)
  • 1 lemon
  • pink peppercorns
  • extra-virgin olive oil
  • salt

Preparation of Salmon and Fennel Carpaccio

  • Arrange the smoked salmon slices on the bottom of the serving plates.

    Squeeze the lemon juice, strain it, and place it in a small bowl or container.

    Add four tablespoons of extra-virgin olive oil and a pinch of salt, and whisk with a fork or a whisk to create an emulsion.

  • Clean the fennel, removing the core, damaged leaves, and fronds (keeping some aside for decorating the finished dishes).

    Wash it and slice it thinly.

    Distribute the fennel slices over the smoked salmon.

  • Season with pink peppercorns and drizzle with the lemon and oil emulsion created.

    Let it rest for ten minutes, then serve your salmon and fennel carpaccio, decorating with the reserved fennel fronds.
