What you need for the plumcake with apricots, arugula, and goat cheese
The dough we will use is that of the yogurt cake in a savory version. We can therefore do without the scale and cook by eye, as I explain in my little article that is titled just that.
- 1 cup plain natural yogurt
- 3 cups all-purpose flour
- 1 cup vegetable oil
- 1 pinch salt
- 1 pinch white pepper
- 2 eggs (whole)
- 1 packet baking powder
- 0.7 oz arugula (fresh)
- 7 oz apricots (pitted and well-ripened)
- 3.5 oz goat cheese (compact, medium-aged, or Greek Feta)
- 10 almonds (whole for garnish, or pumpkin seeds)

This plumcake can also be mixed by hand in a bowl, but a kitchen robot would be very useful. The one I use is a Kenwood multipro, a trusty kitchen ally that I recommend to everyone, because it works well, is compact and not bulky, and has all the accessories you need.
How to prepare the plumcake with apricots, arugula, and goat cheese
The plumcake with apricots, arugula, and goat cheese is mixed in a flash and enjoys the harmony of flavors created by combining apricots with spicy arugula and some pieces of goat cheese. To start, combine the flour, oil, yogurt, salt, pepper, and baking powder. Then add the eggs and mix quickly, before adding the arugula leaves, the coarsely grated cheese, and the apricots in slices. Finally, transfer the batter to a plumcake mold lined with parchment paper and bake. It cooks for 45 minutes at 340°F and is served warm.
Cook’s Notes
I really enjoy cooking with fruit, and during the winter, I often make this plumcake with dried apricots. This was the first time I tested it with fresh fruit, and I must say that the result is excellent, fresh, and a bit tart, as seasonal apricots are.
