Stuffed Potatoes

Stuffed potatoes are a delicious side dish, main course, or single dish that is very easy to prepare.

Ingredients

  • 4 Potatoes
  • 2.1 oz Cooked Ham
  • 1.8 oz Scamorza (or other melting cheese like provola, galbanino, etc.)
  • Extra virgin olive oil
  • Rosemary
  • Salt

Preparation of Stuffed Potatoes

  • Wash the potatoes thoroughly with their skin on and dry them with paper towels.
    Wrap them in a sheet of aluminum foil, closing them into a packet, and bake in a hot oven at 356°F for forty-five minutes.
    Check their cooking by piercing them with a wooden stick, which should penetrate the potato easily, otherwise extend the cooking time.
    Once the potatoes are cooked, remove them from the oven.

  • Remove the aluminum foil and cut them into two parts.
    Scoop them out carefully so as not to break the skin to create little boats.
    Gather the scooped-out part in a small bowl, season with oil, salt, and a pinch of rosemary, and mix thoroughly.
    Chop the ham and scamorza and add to the mixture.
    Mix well and stuff the potato boats.

  • Place them in a baking dish and put back in the oven at 356°F for about fifteen minutes, then switch to grill mode for five minutes.
    Serve your stuffed potatoes piping hot.
