Clean the mushrooms with a damp kitchen paper and cut them into pieces.

Add the mushrooms, salt them, and let them cook for about ten minutes.
Turn off and let them cool.In a large bowl, put the ground meat, grated cheese, egg, and a pinch of salt and mix thoroughly.
Add the mushrooms, incorporating them into the mixture. On a work surface, place a sheet of aluminum foil.
Cover it with a sheet of parchment paper.Spread the speck slices on the parchment paper side by side and overlapping by about half (1).
Shape your mixture into a sausage form and place it in the center of the speck slices (2).
With the help of the underlying parchment paper, fold the speck slices over the meatloaf (3), then turn it over so that the “whole” part of the speck slice is on the top of the meatloaf.
Wrap everything in parchment paper and then in aluminum and place it on a baking sheet lined with parchment paper.
Bake in a preheated oven, at 356° F in static mode, for forty-five minutes.
Remove from the oven and let it cool slightly before unwrapping it and gently transferring it to a serving dish.
Serve your meatloaf wrapped in speck and mushrooms immediately, nice and hot.
