Ingredients for the Lemon Donuts

  • 1 egg
  • zest of 1 lemon (grated, untreated lemon peel)
  • 1 1/3 cups all-purpose flour
  • 1/2 cup water
  • 2 tablespoons stevia (or 1/4 cup of sugar)
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon baking powder

Preparation of the Lemon Donuts

  • In a bowl, pour the egg, water, stevia (or sugar), and oil, and beat vigorously with a spoon until you obtain a homogeneous emulsion.

  • Add the grated zest of an untreated lemon and mix it with the rest.

  • In a separate bowl, mix the flour and baking powder by sifting them, then add them to the bowl with the liquids and stir with a spoon until you get a very soft and lump-free batter.

  • Oil and flour the donut pan, spoon the batter into it (the doses are perfect for 6 donuts), and gently tap the pan on the table to level the batter well.

  • Preheat the oven to 428°F (220°C) and once hot, bake and cook for 25 minutes. Once cooked, remove the lemon donuts from the oven.

  • Before removing the donuts from the pan, wait until they are completely cooled. Once cold, remove them and serve, perhaps accompanied by a slice of fresh lemon and some mint leaves!
