Ingredients
- 9 oz cantaloupe melon
- 4.5 oz pearled barley
- 5 oz blackberries
- 2.1 oz whole blanched hazelnuts
- 200 units yellow cherry tomatoes
- 2 tbsp olive oil
- as needed fine salt
- as needed mixed peppercorns

Preparation of Blackberry and Melon Barley Salad
First of all, boil the barley and, once cooked, drain it and let it cool completely before using it.
Clean the melon and cut it into cubes.
Now wash and slice the yellow cherry tomatoes into rounds.
In a salad bowl, pour in the cooled barley and add the chopped melon and tomatoes.
Season with olive oil, salt, and a grind of fresh pepper.
Toast the hazelnuts for a few minutes then
chop them coarsely leaving a few whole and place them on the salad.
Finally, complete the dish with fresh blackberries.
And voilà… the blackberry and melon barley salad is ready to be served at the table.
Useful Tips
For a stronger flavor, replace the pepper with chili powder.
