Ingredients
- 2 cups cherry tomatoes
- 1/2 cup tomato pulp
- 1 oz flaked almonds
- 7 oz farfalle
- 10 leaves basil
- 2 cloves garlic
- 2 tbsp olive oil
- to taste fine salt

Preparation of Farfalle Cherry Tomatoes and Almonds
First, put the water for the pasta on the stove, when it boils, salt it and throw in the farfalle.
In a large pan, pour 2 tablespoons of olive oil and add the garlic cloves cut in half, put it on low heat and let it brown for a couple of minutes.
Meanwhile, wash the cherry tomatoes then cut them first in half and then each half into 4 parts.
Then add them to the pan with the garlic and let them flavor for a couple of minutes.
After a couple of minutes, add the tomato pulp, a pinch of salt, and cook for 5/7 minutes over high heat.
Coarsely chop the basil leaves and add them to the tomato.
When the pasta is almost cooked, drain it directly into the pan with the sauce.
Mix and adjust the salt. Finally, add the almond flakes.
Now all you have to do is plate it.
And voilà… the farfalle cherry tomatoes and almonds are ready to be served to your guests.
Useful Tips
If you don’t have tomato pulp, you can use a rather thick passata and replace the cherry tomatoes with datterini tomatoes.
If you like, you can contrast the sweetness of the almonds with a hint of chili pepper, fresh or powdered.
