BRAISED RADICCHIO WITH BALSAMIC VINEGAR

Ingredients

  • 9 oz radicchio (1 medium)
  • 2 tablespoons olive oil
  • 1 tablespoon water
  • 1 pinch fine salt
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon balsamic glaze

Preparation of Braised Radicchio with Balsamic Vinegar

  • Cut the radicchio into strips about half a centimeter wide.

  • In a large frying pan, pour 2 tablespoons of olive oil and 1 tablespoon of water. Add the radicchio, a pinch of salt, and cover with a lid.

    Cook on medium-low heat for about 5 minutes.

  • After 5 minutes, add balsamic vinegar, stir and finish cooking, uncovered, for another 3-4 minutes.

    Remove from the heat and adjust the salt.

  • Pour onto a serving plate, add a drizzle of balsamic glaze.

    And voilà… the braised radicchio with balsamic vinegar is ready to be served.

Useful Tips

If you like, you can add garlic during cooking and then remove it at the end.

You can also use Treviso radicchio, the long one.
