Feta and fig pizza, a super delicious and super tasty pizza. Made with a classic base, topped with mozzarella and figs, then garnished out of the oven with Greek feta and honey.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups Manitoba flour
  • 1 oz dried sourdough starter
  • 1 cup water
  • 1 1/2 tsp fine salt
  • as needed semolina flour
  • 4 purple figs
  • 9 oz mozzarella
  • 3 1/2 oz feta
  • acacia honey

  • 2 Pizza Pan

Preparation of Feta and Fig Pizza

  • Pour the all-purpose flour and Manitoba flour into the bowl of the stand mixer. Add the dried sourdough starter and start the mixer at medium speed. Add about 2/3 of the water and knead until absorbed.

  • Stop the mixer and add the salt. Add the remaining water and start the mixer again. Knead for about 5 minutes until you get a smooth and soft dough.

    Now lightly flour the dough with semolina flour and divide it into two parts. Place each dough on a baking sheet floured with semolina flour. Cover with a bowl and let rest for about 3 hours.

  • After the 3 hours of rising, roll out your pizzas, then cover with plastic wrap and let rise for another hour.

  • After the rising time, preheat the oven and bake in a hot oven for 7 minutes at 450°F/475°F.

    Remove the pizzas from the oven and top with the mozzarella cut into slices or cubes and the figs sliced about a quarter inch thick.

  • Bake again for another 7/8 minutes or until the mozzarella is well melted.

  • Once the pizzas are cooked, remove them from the oven and sprinkle with crumbled feta and honey.

    And voilà… your feta and fig pizza is ready to be enjoyed.

Useful Tips

If you can’t find purple figs, green ones will also work, and you can use wildflower honey as well.
