GRATED APPLE AND AMARETTI CAKE

Grated apple and amaretti cake, one of the many versions in which the most homey and famous cake in the world is prepared. This version is called “no-mix” because it does not involve working the ingredients but only assembling.

Ingredients

  • 6 apples Golden apples
  • 1 lemon
  • 4.2 oz amaretti
  • 1.5 cups all-purpose flour
  • 1.5 cups re-milled durum wheat semolina
  • 9 oz granulated sugar
  • 1 packet baking powder
  • 1 cup partially skimmed milk
  • 3.5 tbsp butter
  • 2 tbsp amaretto (liqueur)
  • 2 tbsp peach jam
  • 1 tbsp water
  • 8 amaretti

  • 1 Cake Pan
  • 1 Kettle

Preparation of Grated Apple and Amaretti Cake

  • In a bowl, mix the dry ingredients, namely all-purpose flour, semolina flour, sugar, and baking powder.

  • In another bowl, grate the apples, previously peeled, with a coarse grater. Then divide them into 3 parts.

  • Now divide the dry ingredients into four equal parts, no need to weigh, you can simply divide by spoonfuls.

  • Butter and flour a 9.5-inch to 10.25-inch springform pan.

  • Pour the milk into a kettle and add the butter. Melt over medium/low heat so that the milk does not come to a boil.

    Once melted, set aside.

  • Now start assembling the cake by pouring the first quarter of dry ingredients at the bottom of the cake pan.

    Proceed with a layer of apples, a layer of crumbled amaretti, and another layer of dry ingredients.

  • Continue until all the layers are finished, 4 of dry ingredients, 3 of apples, and 3 of crumbled amaretti.

    With a knife, make slits down to the base of the cake.

  • Then gradually pour the milk and butter mixture.

  • Once all the liquid is poured, let it rest for a couple of minutes, then bake in a preheated oven at 356°F for 30/35 minutes or until the surface is golden.

  • When the cake is baked, remove it from the oven and let it cool completely.

    Once cold, dilute the peach jam with a tablespoon of water and brush it on the surface of the cake.

  • Finally, coarsely crumble the amaretti and sprinkle them over the cake.

  • And voilà….. now the grated apple and amaretti cake is ready to be savored in all its goodness!

Useful tips

If you don’t like Golden apples, you can use any apples you prefer.

Instead of amaretti, you can use chopped hazelnuts or almonds.
