Preparation of Whole Wheat Spaghetti with Shrimp and Sun-Dried Tomatoes
Wash, clean the shrimp, and place them on a paper towel to dry.
Bring water to a boil, salt it, and cook the spaghetti.
Meanwhile, in a large pan, pour the tomato purée with garlic, olive oil, rosemary, and a generous teaspoon of sugar to remove the acidity of the tomato.
Cook for about ten minutes, covered, over low heat.
Finely chop the sun-dried tomatoes and after ten minutes add them to the tomato purée along with the cleaned and dried shrimp tails.
Cover and cook for another 5 minutes still over low heat.
When the pasta is almost ready, drain it and put it in the pan with the sauce. Finish cooking, remove the rosemary sprig and garlic. Then just adjust the salt….
And voilà….. your whole wheat spaghetti with shrimp and sun-dried tomatoes are ready to be served.
Useful Tips
If you like even bolder flavors, you can also add chili pepper to the sauce.
If you like, you can also add half a finely chopped onion.
As an alternative to whole wheat spaghetti, classic semolina ones are also fine.
