The bresaola tortelli are really easy and quick appetizers to prepare, perfect to bring to the table in any season, both in summer being fresh and without cooking, and also perfect to bring to the table during family or friends’ lunches. In my opinion, they are perfect to present also as Christmas appetizers for the holidays. I used cream cheese, lamb’s lettuce, salt, and pepper for the filling, but if you prefer, you can also use ricotta. If you want them even tastier, you can add grated Parmesan or maybe Pecorino. Steps to make bresaola tortelli
To prepare the bresaola tortelli, first put some cream cheese in a blender with blades along with some previously washed lamb’s lettuce, extra virgin olive oil, salt, and pepper, and blend well. Now the filling is ready. Place a slice of bresaola on a cutting board, put a teaspoon of filling in the center, fold it into a half-moon by pressing the edges that contain the filling well.
Then fold the edges inward and seal well as if it were a real ravioli. You can serve the bresaola tortelli on a serving plate, perhaps placed on a bed of lamb’s lettuce, with a drizzle of extra virgin olive oil and some Grana flakes if you like.
You can decide to serve them immediately or keep them in the refrigerator. Delicious!
