Eggplant in the Pan (without frying)

The eggplant in the pan is a typical dish of Neapolitan culinary tradition, loved for its simplicity and rich, intense flavor. With this recipe, I propose a light version of eggplant in the pan without frying, ideal for those seeking a tasty dish but healthier. Just like peppers in the pan, I often prepare them, especially when I have little time or no desire to fry, like in the summer when it’s too hot to be at the stove. But when I don’t feel like standing there turning the eggplant and don’t want to give up my favorite vegetable, I prepare eggplant with cherry tomatoes baked and topped with mozzarella.

Ingredients

  • 1 lb eggplant
  • 9 oz cherry tomatoes
  • 4 tablespoons extra virgin olive oil
  • 1 clove garlic
  • 5 leaves basil

Steps

  • First, wash and dice the eggplant.

    Heat the oil in a large pan, let the previously peeled and crushed garlic brown. If you want an even lighter version, you can skip frying the garlic in the oil, but cook everything together with the eggplant.

    They will release it again into the pan. It’s important to stir from time to time, being careful to turn with a wooden spoon occasionally.

    Meanwhile, wash the cherry tomatoes and cut them into 4 parts.

    When the eggplant begins to release the oil, add the basil and a bit of salt. Continue cooking for another 5 minutes.

    The result will give you eggplant in the pan (without frying) that is both light and tasty. Serve them in a bowl or a baking dish and garnish with basil leaves.

Tips and Storage

The eggplant in the pan is delicious both hot and at room temperature. They are good to enjoy as a side dish for grilled meats or fish, or as a topping for bruschetta or pasta.

The eggplant can be stored in an airtight container in the refrigerator for up to 2 days. Before serving, it’s good to reheat the eggplant in a pan or microwave.
