Apple cake is perhaps the most famous and prepared cake in many different ways because every family, country, or state has its own version. This is the recipe my grandmother used to prepare with a slight variation of mine, namely lemon zest.

Ingredients

  • 2.2 lbs Golden apples
  • 4 eggs
  • 1 1/4 cups granulated sugar
  • 1 cup butter
  • 1 lemon
  • 2 1/2 cups all-purpose flour
  • 1 packet baking powder
  • 1/2 cup apple juice

Tools

  • 1 Stand Mixer
  • 1 Knife
  • 1 Cutting Board
  • 1 Citrus Juicer
  • 1 Lemon Zester
  • 1 Cake Pan
  • 1 Spatula

Apple Cake Preparation

  • Peel the apples, remove the core, cut them into cubes of about 1/2 inch and place them in a bowl.

  • Squeeze the lemon and drizzle the apples with the juice to prevent them from browning.
    Cover and set aside.

  • Now in the mixing bowl, pour in the sugar, add the eggs, and the grated lemon zest. Mix until the eggs become fluffy.

  • Stop the mixer then add the butter (at room temperature) in pieces and work until everything is well incorporated.

    Don’t worry if small lumps form, they will disappear by the end of the recipe.

  • In a bowl, combine the all-purpose flour and baking powder.

  • Gradually incorporate the dry ingredients into the egg, sugar, and butter mixture.

  • Once all the flour is incorporated, add the apple juice and stir until absorbed.

  • Now remove the bowl from the mixer and start incorporating the apples until you get a homogeneous mixture.

  • Then transfer everything to a cake pan lined with parchment paper, cover with aluminum foil leaving it slightly raised on 2 sides to allow steam to escape, and bake in a preheated oven at 350°F for 25 minutes. After 25 minutes, remove the foil and continue baking for another 20/25 minutes. At the end of cooking, use a toothpick to check doneness.

  • Once baked, remove from the oven and let cool completely before removing the cake from the pan.

    Voilà… now the apple cake is ready to be served for breakfast or as a snack.

Useful Tips

I used parchment paper, but you can easily butter and flour the cake pan.

Instead of Golden apples, you can also use Renette apples.
