- 5.3 oz blanched almonds
- 3.2 oz toasted hazelnuts (chopped)
- 2.1 oz sugar
- 1 egg white
- 1 tbsp rum
- 4.2 oz 55% dark chocolate
- 12 whole hazelnuts (toasted)
- powdered sugar
Steps
First, start by chopping the almonds and hazelnuts: finely chop the almonds and more coarsely chop the toasted hazelnuts. You can do this manually with a knife or use a food processor as I did. Pour the chopped almonds into a bowl and then add the sugar.
Now beat the egg white and then take 2 tablespoons and add them to the mixture. Then also add the toasted and chopped almonds.
Add the tablespoon of rum to the mixture and start mixing with your hands. Meanwhile, melt the dark chocolate (in a bain-marie or in the microwave) and once melted, pour it into the bowl.
Continue kneading and when all the ingredients are well combined (it will only take a few minutes), take some of the mixture, press it in the palm, and insert a toasted hazelnut in the center.
Close the mixture and shape it into a sphere. Place the chocolate truffle with a hazelnut heart on a plate or container and coat the sweet with powdered sugar. Repeat the operation until all the mixture is used.
