The potatoes with wild herbs are a simple yet very tasty dish that brings the fragrance of nature to the table. Perfect as a side dish to pair with meat dishes such as Rabbit in White Wine and Lemon-Scented Meatballs, or as a tempting appetizer, these potatoes gain an intense and unique taste thanks to the use of wild aromatic herbs like rosemary, thyme, wild fennel, oregano and the addition of onion and garlic. The result is a rustic, healthy, and flavorful dish, ideal for enhancing the aromatic properties of the herbs and the softness of the potatoes. I often prepare them, both baked and in a pan, this time I opted for pan cooking.

Ingredients for the Potatoes with Wild Herbs
- 1.76 lbs potatoes
- 1 onion (large)
- 2 cloves garlic
- 1 sprig thyme (dried is fine too)
- 2 pinches dried oregano
- 1 sprig marjoram
- 2 pinches wild fennel
- to taste salt
- to taste pepper
- 3.4 tbsps extra virgin olive oil
Preparation of Potatoes with Wild Herbs
To prepare the potatoes with wild herbs, start with the potatoes. Wash, peel, and cut them into cubes or wedges about 1.18 inches, to ensure even cooking. Slice the onion and lightly crush the cloves of garlic without completely removing the skin (if you prefer a milder aroma).
In a large pan, heat the extra virgin olive oil over medium heat. Add the cloves of garlic and let them fry for 1-2 minutes, until they are lightly golden, then remove them to prevent burning.
Add the sliced onion and let it soften for 5 minutes, stirring often. Add the cut potatoes to the pan and stir well to flavor them with the oil and onion. Cook for 10 minutes over medium heat, stirring occasionally.
Then add the thyme, oregano, marjoram, and wild fennel. Season with salt and pepper, cover with a lid, and continue cooking for another 10-15 minutes, until the potatoes are tender. Remember to stir occasionally to prevent sticking.
At this point, remove the lid and cook for another 5 minutes to brown the potatoes. If necessary, slightly increase the heat.
Transfer the potatoes with wild herbs to a serving dish and serve them hot.

Tips and Variations
If you prefer a stronger taste, you can add a pinch of dried chili pepper.
You can vary the herbs to your liking, using only rosemary or sage, for example. If you don’t have fresh herbs, replace them with dried herbs, reducing the amount.
If the potatoes tend to stick, add a couple of tablespoons of water during cooking or additional extra virgin olive oil.
If you use new potatoes, leave the skin on for a more rustic flavor. Just wash them well under running water.
You can enrich the recipe with diced peppers or zucchini for an even more colorful and flavorful side dish.
If you want to avoid stirring the potatoes often, you can bake the potatoes in the oven at 392°F for about 35-40 minutes, turning them halfway through cooking.
Storage
Potatoes with wild herbs can be stored in the refrigerator in an airtight container or covered with plastic wrap for 2 days.
