Ingredients
- 2 lbs sea bream
- 10 oz cherry tomatoes
- 2 tbsps extra virgin olive oil
- 2 cloves garlic
- 1.5 oz white wine
- 2 sprigs parsley
- to taste salt
- to taste pepper
- Half glass water
Procedure
To prepare the sea bream in ‘crazy water’, start by cleaning the sea bream. After scaling it, make a cut along the belly (I usually use scissors) and proceed to gut the sea bream. Also ensure it is thoroughly cleaned inside by rinsing it under fresh running water.
Take a large pan and cover the bottom with extra virgin olive oil, then place the sea bream in it. Clean the two garlic cloves and cut them in half to release more aroma. Clean and rinse the cherry tomatoes under running water, cut them into wedges or halves as you prefer, and add them to the pan along with the parsley sprig. Then add salt and pepper, and finally, the water and white wine.
Cook the sea bream in ‘crazy water’ covered with a lid over medium heat for about 15-20 minutes (depending on the size of the bream), turning them halfway through for even cooking. To check if they are done, remove a spine from the dorsal fin. If it comes out easily and is free of flesh, your bream is ready. Turn off the heat and start cleaning the fish.
Place the bream on a plate and start by removing the skin, then divide the top part into 2 fillets, taking care to remove the central bone, side bones, and finally the head. Once you have cleaned all the fish, place it on a serving plate, drizzle with the cooking juices, a drizzle of raw extra virgin olive oil, and finely chopped parsley. Serve the sea bream in ‘crazy water’ immediately and enjoy your meal!
