FARINATA WITH HERBS

Farinata with herbs, one of the many versions of one of the most well-known Ligurian recipes. It’s a recipe with a bold and unmistakable taste given by the herbs used. For this recipe, considering the season, I opted for jarred herbs, the ones you sometimes buy for certain recipes and then don’t use again. Easy to make and guaranteed success.

Ingredients

  • 3/4 cup chickpea flour
  • 1 1/4 cups water
  • 1 pinch garlic powder
  • 1 pinch fine salt
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon marjoram
  • 1/2 teaspoon savory
  • 1/2 teaspoon chives
  • 1/2 teaspoon basil
  • 1 oz olive oil

  • 1 Baking Pan
  • 1 Whisk

Preparation of Farinata with Herbs

  • Pour the chickpea flour into a large bowl, add the room temperature water, and mix with a whisk until the flour is well dissolved and incorporated into the water.

  • Add a pinch of fine salt and a pinch of garlic powder and mix.

    Now add all the herbs: rosemary, marjoram, savory, chives, and basil.

    Mix to well incorporate all the herbs, then cover and let rest for 6 hours.

  • After the resting time, pour the oil into the baking pan and grease the entire surface.

  • Now pour the farinata mixture.

    Bake in a preheated oven at 428°F for 15/20 minutes or until a nice crust forms.

  • Once cooked, remove from the oven and let cool for a couple of minutes.

    And voilà… now your herb farinata is ready to be served and enjoyed in all its burst of flavors.

Useful Tips

If you are short on time, you can let the batter rest for just 2/3 hours, no less.

You can use the herbs you like best and in the desired quantity.
