- 1.25 cups all-purpose flour
- 0.57 cups water
- 3 tablespoons freeze-dried red onion (plentiful)
- 1 tablespoon extra virgin olive oil
- 1 egg (XL size)
- 0.14 oz fine salt
- 1 teaspoon instant yeast for savory preparations

Preparation of the Savory Onion Pancakes
In a bowl, pour the egg, water, oil, and salt and mix with a spoon to create a homogeneous emulsion.
In a separate bowl, sift the flour, yeast, and onion, and mix well.
Add the dry mixture to the bowl with the liquid mixture and stir vigorously with a spoon until you obtain a homogeneous and moderately dense batter.
Heat the pan over medium flame, once hot, pour & a ladle of batter at a time, cook for 2/3 minutes, then flip the pancake with a kitchen spatula and cook for another 2/3 minutes. Continue in this way until the batter is used up.
As the pancakes are cooked, place them on a serving plate or in a baking tray lined with parchment paper. Once cold, you can enjoy them as you like, either on their own or filled with cold cuts, cheeses, and vegetables!
