Ingredients
- 5.3 oz radicchio (round)
- 3 fresh Washington Navel oranges
- 2.1 oz walnuts
- 3.5 oz pomegranate seeds
- 2 tbsps olive oil
- to taste fine salt
- to taste mixed peppercorns
Tools
- 1 Oval dish
- 1 Cutting board
- 1 Citrus juicer
Preparation of Orange and Radicchio Salad
Julienne the radicchio and place it at the bottom of the serving dish or bowl.
Peel 2 oranges and cut them into pieces, then add them to the radicchio.
Clean the pomegranate by removing the bitter white parts and sprinkle the seeds along with coarsely chopped walnuts over the salad.
For the dressing, juice one orange and add 2 tablespoons of olive oil, 2 pinches of salt, and a grind of fresh pepper to the juice.
Pour over the salad and mix well.
And voilà, your orange and radicchio salad is ready to be served.
Useful Tips
I used round radicchio, but Treviso radicchio, which is longer, works just as well.
If you really don’t like radicchio, opt for arugula.
