Coffee bread cake, a so-called “recycling” cake because it is made with stale bread. Coffee and other very simple ingredients are then added, making this cake soft and delicious.

Ingredients
- 1.1 lbs stale bread
- 24 coffee cups coffee (little cups)
- to taste water
- 3 eggs
- 1 cup granulated sugar
- 2/3 cup butter (room temperature + as needed for the cake pan)
- 1/2 cup unsweetened cocoa powder
- 1.8 oz amaretti
- 1 oz amaretto (liqueur)
- to taste breadcrumbs

Preparation of Coffee Bread Cake
Cut the stale bread into slices or large chunks and place it in a very large bowl.
Prepare the coffee and pour it into a measuring jug. Let it cool and then add water to reach a total of 1.7 liters of liquid.
Pour the coffee and water mixture over the bread, mix, and cover.
Let it rest for 12 hours, stirring a couple of times during the rest period.
After the 12-hour rest, mash the bread with a fork to make it a sort of homogeneous dough.
In the bowl of the stand mixer, pour the eggs and sugar and work until the eggs are nice and frothy.
Then add the room temperature butter and work it until well blended.
Add the unsweetened cocoa powder and mix for a couple of minutes, then add the crumbled amaretti and the amaretto liqueur.
Now, without stopping the stand mixer, gradually add the soaked bread and work until you have incorporated all of it.
Butter and dust with breadcrumbs a 10/11-inch diameter cake pan.
Pour the bread mixture into the cake pan, cover with aluminum foil, and bake in a preheated oven at 350°F for 45 minutes, then remove the foil and finish baking for another 35 minutes. Always do the toothpick test.
Once baked, turn off the oven and leave the cake in the oven with the door ajar for 10 minutes, then remove from the oven and let cool completely before serving.
And voilà… the coffee bread cake is ready to be served to your guests.
Useful Tips
The amaretto liqueur can be omitted or replaced with coffee liqueur or white rum.
Instead of unsweetened cocoa, you can use sweetened cocoa.
