Chicken cutlets with yogurt, soft and tasty, baked with just a drizzle of oil… an easy and quick recipe, to vary from the classic pan-fried cutlets. Simple slices of chicken breast, first marinated in yogurt, and then breaded. To make them even more delicious and inviting, I added a pinch of curry and herbs to the breadcrumbs… but if you don’t like spices, you can omit these ingredients. The yogurt “replaces” the eggs and helps the breading stick well, making the cutlets lighter and softer inside. Try this recipe, it’s very simple but really flavorful, just pair it with a side of potatoes or vegetables to serve a complete meal!

Ingredients
- 0.66 lbs chicken breast (in slices)
- 0.42 cup plain yogurt
- 1 tbsp lemon juice
- as needed breadcrumbs
- Half tsp curry (or turmeric, to taste)

Preparation
Pour the yogurt into a bowl, add the lemon juice and mix.
Soak the chicken slices (1) and let them marinate for 10-15 minutes.
Meanwhile, prepare a tray with 3-4 tablespoons of breadcrumbs, the curry, and a handful of dried herbs to taste (oregano, thyme, rosemary, or others).
Take the meat slices and coat them in the seasoned breadcrumbs, pressing it onto both sides (2).
Place the breaded slices on a baking tray lined with parchment paper, and drizzle with a little olive oil over the top (3).
Put the tray in a fan oven at 356-365°F and bake the cutlets for 20-25 minutes, depending on their thickness.
Once cooked, transfer them to a serving plate and sprinkle with a pinch of salt. The chicken cutlets with yogurt are ready to be served!
Tips and Notes
You can season the breadcrumbs to taste, for example by adding some garlic powder or grated Parmesan cheese.
You can also cook the slices in an air fryer or in a pan.

Can I omit the curry?
Of course, if you don’t like it, you can omit it, or replace it with simple turmeric, just to give a little yellow color.
What yogurt should I use?
For this recipe, you need classic plain yogurt, either whole or low-fat works fine.
