Preparation of Linguine with Lemon Pesto
First, bring the water to a boil for cooking the pasta. Once it starts to boil, salt it with coarse salt and throw in the linguine.
While the linguine is cooking, in a large pan, pour 4 tablespoons of LEMON PESTO for the recipe click on the blue text.
Add a couple of tablespoons of the pasta cooking water and two tablespoons of olive oil, then stir to make it nice and creamy.
When the linguine is almost cooked, just a couple of minutes before the desired doneness, drain them directly into the pan with the lemon pesto and mix well until the pasta is cooked. If the sauce tends to dry out, add a little bit of cooking water. Always a little at a time so as not to make it too liquid.
Now you just have to plate it.
And voilà… the linguine with lemon pesto are ready to be brought to the table and served to your guests.
Useful Tips
For an even bolder flavor you can add freshly ground black pepper or a pinch of chili powder.
Of course, you can use any pasta you like, but I recommend a long pasta because the sauce wraps around it better.
