Ingredients

  • 1.5 lbs pumpkin
  • 4 oz scamorza cheese
  • 1 sprig rosemary
  • to taste salt
  • to taste pepper
  • 3 oz bacon
  • to taste extra virgin olive oil

Steps

  • First, cut the pumpkin in half, then slice it into approximately 20 pieces (for convenience, you can cut the pumpkin piece in half and continue until you have equal slices).

  • Take a medium-sized baking tray, well-oiled and sprinkled with breadcrumbs, then place the pumpkin slices side by side. Add the rosemary, diced bacon, and finally drizzle with a little olive oil, salt, and pepper.

  • Bake the pumpkin in a preheated oven at 356°F with the fan mode on, for 30-40 minutes or until well cooked.

  • A few minutes before the end of baking, add the scamorza cheese on top and return to the oven until the cheese melts.

Storage and Tips for Pumpkin Cheese and Bacon

You can store it in an airtight container in the fridge for up to two days. If you prefer to speed up the recipe, you can use pre-cleaned and cut pumpkin available in the supermarket fridge. You can also prepare individual servings by cooking everything in small terracotta pots.
