This pizza with cherry tomatoes and mini mozzarella balls was created at the beginning of Italy’s adventure in the European soccer championship… It is a simple pizza with a delicate taste and a hot/cold contrast given by its tricolor ingredients like our flag.

Ingredients
- 2/3 cup all-purpose flour
- 2/3 cup Manitoba flour
- 1 tbsp dried sourdough yeast
- 1 pinch sugar
- 2 pinches salt
- 3.5 oz water
- 1/3 cup tomato puree
- 3.5 oz cherry-sized mozzarella balls
- as needed cherry tomatoes
- 2.5 oz mozzarella for pizza
- as needed basil
- as needed arugula pesto
Tools
- 1 Stand Mixer
- 1 Pizza Pan
- 1 Squeeze Bottle
Preparation of Pizza with Cherry Tomatoes and Mini Mozzarella Balls
Pour the flours, dried sourdough yeast, and sugar into the stand mixer and give it a quick mix.
Start the stand mixer and begin to incorporate about 3/4 of the water. When the water is fully absorbed, add the salt and the remaining water.
Knead until you get a smooth and homogeneous dough.
Leave the dough in the stand mixer’s bowl, cover with plastic wrap, and let it rise for about 4 hours.
After the first four hours of rising, transfer the pizza dough with cherry tomatoes and mini mozzarella balls to a 12-inch baking sheet, previously oiled or lined with parchment paper.
Spread it well and cover again with plastic wrap. Let it rise for another 4 hours.
Once the rising is complete, bake in a preheated oven at 392°F for 7/8 minutes.
Then remove from the oven and top with the tomato puree and mozzarella for pizza cut into pieces.
Bake again until the pizza is nicely cooked and the mozzarella is fully melted. It will take about 7/8 minutes.
Remove from the oven and decorate the pizza with cherry tomatoes and mini mozzarella balls, add a few fresh basil leaves and some arugula pesto.
And voilà… your Italy pizza is ready to be enjoyed, maybe while watching the national team on TV.
Useful Tips
If you don’t like arugula, use Genoese pesto.
