APPLE AND BREADCRUMB CAKE

The apple and breadcrumb cake is a cake made without flour, oil, and butter. It’s a “recycled” recipe because it uses leftover old bread. With the addition of a couple more ingredients like yogurt and amaretti, you’ll get a truly delicious and tasty cake, perfect for breakfast.

Ingredients

  • 3 eggs
  • 1/2 cup brown sugar
  • 2 cups breadcrumbs
  • 2 cups amaretti
  • 2 3/4 cups Golden apples (cleaned)
  • 7 oz Greek yogurt
  • 1 packet baking powder

Preparation of Apple and Breadcrumb Cake

  • In a bowl, beat the eggs with a fork, then add the brown sugar, breadcrumbs, and finally the amaretti coarsely crushed by hand. Mix until well combined with the eggs.

  • Clean the apples, cut them into pieces, and add them to the egg and bread mixture.

  • Add the sifted baking powder and mix to incorporate it well with the other ingredients.

    Finally, add the Greek yogurt and mix everything well.

  • Line a 24-inch baking pan with damp, squeezed parchment paper.

  • Pour the apple and breadcrumb cake mixture, smooth it out well, and bake in a preheated oven at 350°F for 40 minutes.

  • Once the cake is baked, always do the toothpick test, turn off the oven, sprinkle with brown sugar, and leave in the oven for 5/7 minutes.

  • Now remove it from the oven and let it cool.

    And voilà… once cooled, your apple and breadcrumb cake is ready to be served for breakfast.

Useful Tips

I used Greek yogurt, but regular yogurt and any flavor you like is fine.

If you have a 150 g yogurt pack, you can add 50 g of milk (sometimes I do)
