SALAD WITH COTTAGE CHEESE AND APPLE

Salad with cottage cheese and apple, a salad with a fresh and light flavor, rich in ingredients that blend perfectly together. It’s a very easy dish to make, plus there’s no need to cook anything so it can be prepared at the last minute. Suitable as both a main dish and an appetizer or in mini portions it can also be served for a home aperitif.

Ingredients

  • 1.4 oz lamb's lettuce
  • 3.5 oz variegated radicchio from Castelfranco IGP
  • 5.6 oz toma cheese (mild, lightly aged)
  • 1 Golden Delicious apple
  • 2.8 oz blueberries
  • 2 tbsp wildflower honey
  • 2 tbsp olive oil
  • 2 pinches fine salt

Tools

  • 2 Oval plates
  • 1 Cutting board
  • 1 Coffee cup

Preparation of Salad with Cottage Cheese and Apple

  • Wash and dry the variegated radicchio and lamb’s lettuce thoroughly.

    Then place the two salads on the serving plates to form a bed, half on one plate and half on the other.

  • Cut the toma cheese into cubes about half an inch and scatter them randomly over the two plates on top of the radicchio and lamb’s lettuce.

  • Wash the apple well but do not peel it.

    Divide it into 4 parts and remove the core. Slice it into pieces and then place it on the salad bed.

  • Then add the blueberries.

    Pour the olive oil and honey into a coffee cup. Stir to mix the two ingredients well.

    Now pour half of the dressing over each salad, finally, add a pinch of salt.

  • And voilà… your salad with cottage cheese and apple is ready to be served and enjoyed in all its goodness.

Useful Tips

In place of wildflower honey, you can use acacia honey; I do not recommend chestnut or eucalyptus honey as they have a too strong and pronounced taste.

Instead of mild toma cheese, you can use mild fontal.
