CHICKPEA PANCAKE WITH CHIVES

The chickpea pancake is a classic of Ligurian cuisine. Spending several summers there, I have tasted different flavors, but the chickpea pancake with chives is one of my favorites. Simple, tasty, and flavorful. Perfect as a snack or why not for an appetizer… maybe by the sea!!!

Ingredients

  • 3/4 cup Chickpea flour
  • 1 1/4 cup Water
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 tbsp Chives
  • 1.5 oz Olive oil

Tools

  • 1 Baking pan

Preparation Chickpea Pancake with Chives

  • Pour the chickpea flour into a bowl and add about half the amount of water, stirring with a whisk to avoid lumps.

    Once well mixed, pour in the remaining half of the water, still stirring with the whisk.

    Cover the bowl with plastic wrap and let it rest for at least 5/6 hours.

  • After the resting time of the pancake, if foam has formed on the surface, remove it with a spoon.

    Then add salt, pepper, chopped chives, and half the olive oil.

  • Grease a round non-stick baking pan of about 12-12.5 inches with the remaining oil.

    Then pour the chickpea pancake batter with chives and bake at 450°F for 15/20 minutes or until a nice crust has formed.

    Once baked, remove from the oven and let it cool for a few minutes.

    And voilà… now your chickpea pancake is ready to be enjoyed.

Useful Tips

If you have a copper pan, like the one used in Liguria, even better.
