Pumpkin in a Carriage in Air Fryer

This version of Pumpkin in a Carriage in Air Fryer is amazing! After making the Breaded Pumpkin that was very successful, I promised myself to make an autumn version of the super delicious and classic ‘mozzarella in carrozza,’ although I have to admit the web is full of pumpkin cutlets or in-carrozza recipes. But then I saw a reel from chef Mainardi and couldn’t resist replicating his! I guarantee that the WoW effect is not only visual but also for the palate!!

In this recipe for Pumpkin in a Carriage in Air Fryer, unlike the original, I decided not to cut out the bread slices with a ‘cookie cutter’ for two reasons: my tomini were larger, risking not being able to seal them, and at the same time, I did not want to waste bread, for an aesthetic reason. Following his recipe, the pumpkin is steamed, and I added some sage leaves and a sprig of rosemary to make it more aromatic. If you prefer, you can soften it in a pan, avoiding baking or even air frying; the pumpkin pulp must be more moist and very soft for this preparation.

Chef Mainardi also used Air Fry cooking, obtaining a golden and extra-crispy breading without resorting to classic frying. And then the tomino melts perfectly in cooking and goes great with the sweetness of the pumpkin. For an extra flavor, I also added speck, instead of bacon, adding a smoky note.

If you have any leftover pumpkin, you can make a portion with another cheese; I made it with provola… excellent! I’ll leave you the ingredients and procedure if you want to prepare it too and choose which one you liked most.

Ingredients for 2 servings of Pumpkin in a Carriage

  • 10.5 oz delica pumpkin (or mantovana)
  • A few leaves sage
  • 1 sprig rosemary
  • to taste chives
  • to taste salt and pepper
  • 4 slices sandwich bread
  • 2 tomini
  • 2 slices speck
  • pumpkin (previously cooked)
  • to taste milk (to seal the edges of the bread)
  • 2 eggs
  • to taste breadcrumbs
  • A few sprays extra virgin olive oil
  • 2 slices sandwich bread
  • 1 tablespoon pumpkin (cooked)
  • 2 slices provola (cut a bit thick)
  • 1 slice speck

Steps

How to Prepare Pumpkin in a Carriage in Air Fryer

  • Start by cooking the pumpkin; after cutting it, remove the seeds and inner filaments

  • Steam Cooking in Ninja Combi 12 in 1: place the pumpkin with sage and rosemary on the grill of the combi tray after filling it with 1 liter of water

  • Set the switch to combi cooker mode (to the left) and set the steam program for 10 minutes
    Pan Cooking: also remove the pumpkin peel, cut it into cubes, and transfer it to the pan with sage and rosemary. Soften it over low heat covered with a lid, stirring occasionally. Do not let it stick and if necessary, add a bit of water

  • Once ready, remove sage and rosemary and let it warm

  • Take the pumpkin pulp with a spoon and transfer it to a bowl. Mash it with a fork to obtain a soft puree. Add salt, pepper, and chives, which can be used dried or fresh. Mix well

  • On a cutting board, flatten the bread slices with a rolling pin

  • Place a tablespoon of pumpkin puree in the center

  • Lay a slice of speck on top

  • Finally the tomino

  • Brush the edges of the bread with milk

  • Close with the other slice of bread. Press lightly, being careful not to break the bread

  • Seal the edges well, always pressing gently. Repeat in sequence with the other slices

  • Now take two small trays: in one, place the slightly beaten eggs; in the other, the breadcrumbs

  • Dip the bread first in the egg and then in the breadcrumbs, adhering well and further sealing the edges to prevent the cheese from escaping. Spray oil on both sides

  • Cook in the air fryer at 375°F for 15 minutes, turning the bread if necessary for more even cooking

  • They should be well browned

  • Cut the slices in half and enjoy your Pumpkin in a Carriage in all its crunchiness and creaminess😍😍

  • Place a slice of provola on the bread, the pumpkin, the slice of speck, and another slice of provola and close with the bread. Proceed with breading and cooking

Tips and Storage for Pumpkin in a Carriage

The tomino should be cold from the fridge so it doesn’t melt too quickly. If you can’t find small tomini and use the larger ones like I did, buy square sandwich bread slices or the maxi pan bauletto, removing the crust

I don’t think it will happen, but if there are leftovers, store the pumpkin in a carriage in the refrigerator for a couple of days covered with plastic wrap.

For a vegetarian version, do not add the speck

If you want an even lighter version, you can dip the bread in a batter of water and flour instead of eggs
