Buchteln with Thermomix (yeast pastry treats)

Ingredients

  • 12 oz type 0 flour
  • 5 oz type 00 flour
  • 7 oz milk
  • 0.88 oz fresh yeast (or 0.25 oz of the dry one)
  • 1.75 oz sugar
  • 3.5 oz butter
  • 0.18 oz salt
  • 1 egg (whole)
  • 9 oz Nutella
  • 9 oz jam

Steps

  • Prepare the yeast:
    To create your yeast dough, if using dry yeast, pour the lukewarm milk into the Thermomix bowl, add sugar and yeast. Set 2 minutes at 99°F, speed 2. If using fresh yeast, dissolve it in the lukewarm milk with sugar before proceeding.

    Knead the ingredients:
    Add the flour, soft butter, egg, and salt into the bowl.
    Knead for 3 minutes at Kneading function. If the dough is too sticky, you can add a little flour, one tablespoon at a time.

    Leavening:
    Transfer the dough to a lightly floured bowl, cover with plastic wrap or a damp cloth.
    Let rise in a warm place until doubled in size, about 1 hour.
    Form the Buchteln:
    After rising, take the dough and divide it into balls of about 1.75 oz each.
    Flatten each ball with your hands or a rolling pin, forming a disc.
    Put a teaspoon of jam in the center of each disc.
    Close the edges well, forming a ball, sealing the jam or Nutella inside.
    Assemble and let rise again:
    Place the Buchteln in a buttered or parchment-lined baking tray, leaving a little space between them.
    Cover with a cloth and let rise again for about 30 minutes.
    Baking:
    Preheat the oven to 356°F.
    Bake the Buchteln for about 20-25 minutes, until golden.
    Decorate and serve:
    Once out of the oven, you can dust them with powdered sugar.
    Serve warm, perhaps accompanied by a cup of tea or coffee.

Here are some useful tips:
At room temperature: If you plan to consume them within 1-2 days, you can store them in an airtight container or under a glass dome, at room temperature. Make sure they are well covered to prevent drying out.
In the refrigerator: For longer storage, you can place the desserts in an airtight container and store them in the fridge. Remember to warm them slightly before serving, perhaps in the microwave or oven, to restore softness.
For longer storage: You can also freeze them. Wrap them individually in plastic wrap or place them in a resealable food bag, removing air. When you want to enjoy them, thaw at room temperature and warm them in a low-temperature oven for a few minutes.
If you want to keep them soft even after a few days, you can brush them with a little melted butter before storing, so they remain softer.
