Ingredients
- 30 cups water
- to taste salt
- 1 cup instant polenta
- 2 tbsps extra virgin olive oil
- 1 1/4 cups mozzarella
- 1 cup tomato sauce
- to taste dried oregano (optional)
- to taste basil
How to Prepare Polenta Pizza
Boil the water, then salt it and pour in the instant polenta slowly.
Stir continuously with a whisk until you get a thickened mixture. This will take about 4-5 minutes (depending on the type of polenta you choose).
Pour the polenta into a 13×11 inch rectangular baking tin lined with parchment paper and well-oiled. Level well with the spatula.
At this point, pour the tomato sauce and bake at 375°F in fan mode for about 10 minutes.
Remove from oven and top with the mozzarella cut into pieces, then bake again for a few minutes until the cheese is melted.
As a final step, drizzle with a little oil, basil, and oregano. Serve your polenta pizza still hot!
Storage and tips for polenta pizza
If you have leftover polenta pizza, store it in the refrigerator covered with plastic wrap. It would be better to cut the mozzarella a few hours before use and let it drain in a colander placed inside a bowl to let it lose part of its preserving water. If you have leftover polenta, you can use it to create delicious crostini with a pastry cutter to top in 1000 different ways; I recommend sausage and stracchino cheese.
