Today I offer you the simplest way to create choux pastries at home with the help of your Thermomix: it’s a system that I find very convenient because everything is done in the Thermomix bowl without dirtying anything else.

Ingredients
- 200 ml water
- 110 g butter
- 2 tablespoons sugar
- 1 pinch salt
- 160 g all-purpose flour
- 4 whole eggs

- 1 Piping Bag
- 1 Plain Nozzle
- 2 Baking Trays
- Parchment Paper
Steps
1. Place water, butter, salt, and sugar in the bowl and cook: 5 minutes and 30 seconds at 212°F, speed 1.
2. Add all-purpose flour and mix: 20 sec at speed 4
3. Let it cool for 15 minutes by removing the bowl from its housing.
4. Reposition the bowl, add the eggs, and mix: 50 sec at speed 5
The dough is ready!
Transfer the dough into a piping bag with a plain nozzle 9 or 10 mm.
Line the tray with parchment paper and start creating small balls by pressing the piping bag (I count to 3) and leaving about 2 inches of space between each.
Turn on the oven to 338°F and bake the trays for about 20 or 25 minutes.
Towards the end of baking, I open the oven to let the humidity out and close it immediately.
Let the choux cool completely before filling and decorating it.
It keeps perfectly frozen.
