The apple cake is a classic dessert of Italian cuisine and is perhaps one of the pantry cakes I absolutely prefer: soft, fragrant, and easy and quick to prepare, with various textures given by the soft batter and the chunks of apple. In one word: perfect, both for adults and children.

Today I want to share with you a slightly more particular apple cake recipe. It is a recipe that involves a lot of apples and very little batter.

It results in a moist cake that I have called Thousand Apples Cake.

As you will see, the quantities and ingredients are adjusted for a medium-sized cake tin, but it is difficult to make a proportion with the number of people: this cake is so good and delicious that a second serving is inevitable! I hope the Thousand Apples Cake pleases you and can become a sweet treat for your family just as it is for me and mine.

Ingredients

With this dose, you get a cake about 8 inches in diameter. Double the doses for a 9 1/2-inch cake pan.

  • 2 eggs
  • A few pinch salt
  • 1 lemon (juice)
  • 4 tablespoons sugar
  • 4 tablespoons spelt flour
  • 1 oz butter
  • 2 tablespoons hazelnut flour
  • 1 teaspoon baking powder
  • pods vanilla
  • 4 apples

Steps

The procedure is very simple and quick, just follow a few simple steps to bake a soft and fragrant cake. You can use the type of apples you prefer, the important thing is that they are whole and of good quality.

Peel and slice the apples very thinly with the mandolin, drizzling with the juice of one lemon to prevent them from darkening.

Next, set the butter to melt in a saucepan.

Take the bowl and pour in the eggs with the sugar, beat them quickly with the fork, and then pour the melted butter over the mixture.

Mix well and add the flours and sifted baking powder. Mix roughly and then add all the apples together.

Stir well and pour into the buttered and floured mold.

Bake in the oven at 350°F for about 40 minutes. Remove from oven and allow to cool before serving.

This apple cake stays very moist and keeps for a few days at room temperature and covered.
