Soft Loaf Bread with Bread Machine

The soft loaf bread is a white, soft bread that is well-suited for slicing. It is suitable for breakfast or also for toast and sandwiches, in either sweet or savory versions.
Unlike a classic sandwich bread, this particular version will surprise you with the presence of some ingredients, but above all for its softness and its ability to stay soft for many days.
I almost always make it with the Silvercrest bread machine sold by Lidl.
By putting all the ingredients together, I find it convenient and quick.

Ingredients

  • 10.58 oz All-purpose flour (strong (I used Panettone Z from molino della Giovanna))
  • 6 oz Type 0 flour
  • 4.58 oz Type 2 flour
  • 1.41 oz Sugar
  • 3.53 oz Yogurt ((or 2.82 oz spreadable cheese + 0.71 oz milk))
  • 2.12 oz Extra virgin olive oil
  • 0.35 oz Fresh brewer's yeast (or 1/4 packet of dry yeast)
  • 10.58 oz Milk
  • 0.49 oz Salt

Preparation

Preparation with the Bread Machine

  • Place all the liquid ingredients in the bread machine pan first, including the yeast dissolved in the milk.

    Once done, add all the flours on top (I used 3 types, but it can also be done with just Manitoba flour).

    Place the sugar in one corner and the salt in the opposite corner.

    Close the bread machine and set the gluten-free program, as it is the longest and allows for better rising.

    Set the weight to 1250g

    And medium browning.

    Turn it on and after about 3 hours and 45 minutes, I take out my fantastic loaf bread.

The loaf bread keeps for two or three days in a food bag.

You can freeze it already sliced to have it ready for use.
