As every year Mother’s Day is approaching, and we all want to prepare a delicious surprise for that special day!
Therefore, I propose a fresh and tasty dessert, very easy to make and super quick to decorate, with strawberries that are just the fruit of the season this May.
The cake “cheesecake” as I called it.

Ingredients
- 1.25 cups All-purpose flour
- 0.75 cups Sugar
- 5 Eggs (whole)
- 5.3 oz Mascarpone
- 5.3 oz Cream cheese (like Philadelphia)
- 0.75 cups Fresh liquid cream (semi-whipped)
- 2 tbsps Honey
- 1 tsp Gelatin
- 2 tbsps Fresh liquid cream
- to taste Vanilla
- 1.25 cups Sugar
- 2.5 cups Water
- to taste Liquor (as preferred)
- 10.5 oz Strawberries (or other fruit as preferred)
Tools
- 1 Stand Mixer
- 1 Cake Pan 9 – 10 inches in diameter
Preparation
To prepare our cheesecake cake, we start with the preparation of the sponge cake.

The recipe is very easy, and I recommend it is without baking powder.
When it is ready, it is necessary to let it cool well.
At this point, we prepare the cake filling according to the cheesecake recipe, which I assure you is fabulous and is without added sugar.
We also prepare the syrup, by placing the sugar in water and boiling it for a few minutes.
Turn off the stove and add liquor to taste or strawberry juice. (or any fruit juice).
Now that we have sponge cake, cream, and syrup it’s time to assemble the cake!
Cut the sponge cake into three discs. Then make 2 horizontal cuts with a serrated blade knife.
Take the first layer, place it on the serving plate, and soak it with syrup. You can use a silicone brush or a special bottle with holes in the cap.
Once soaked, put a layer of filling, and possibly strawberries in pieces.
And continue with the other layers like this.
This time I only made one layer of filling and two of sponge cake to give more of a cheesecake feel.
Decorate the “cheesecake” cake as you like with cream (I preferred to leave it bare) and strawberries to taste!
Your fantastic cake is ready!
Storage
The cake needs a few hours to settle and compact in the fridge.
It keeps in the refrigerator for about 3 days.
