To prepare the cake with ricotta and jam without butter, first put the ricotta and sugar in a large bowl, work it well with a whisk. It should become a cream. Now add 1 egg at a time and mix them in well. Then add the corn oil and mix again. Finally, add the all-purpose flour and baking powder.
Mix well until you get a smooth and homogeneous dough. Meanwhile, preheat the static oven to 356°F. Now take a 8-inch baking pan and oil and flour it, or butter and flour it as you prefer. Pour the jam on the surface of the cake, I chose peach jam but you can choose the one you prefer and bake it at 356°F for about 40 minutes. Always do the toothpick test if possible, to see if the cake is cooked. Take it out of the oven and let it cool.
If you like, sprinkle it with some powdered sugar. Your cake is ready to be enjoyed!
Storage and tips
You can store the cake under a glass cake dome for a couple of days.
