The smacafam is a rustic pie typical of Trentino cuisine, it is really quick to prepare and is a very easy recipe. The term smacafam from Trentino can be literally translated as “hunger crusher.” It is a simple yet very tasty dish, very filling, and usually made during Carnival or festive periods. The basic recipe includes regular flour and luganega, but you can try other variants made with regular flour and the addition of buckwheat flour, or with the addition of speck or pancetta. Ingredients to prepare smacafam

  • 2 cups whole milk
  • 2 3/4 cups all-purpose flour
  • 2 eggs
  • to taste salt
  • to taste black pepper
  • 10.5 oz luganega sausage

Steps to make smacafam

  • To prepare smacafam, first take the eggs, crack them into a bowl and beat them with a hand whisk. Gradually add the whole milk while continuing to stir the mixture. Now weigh the all-purpose flour and sift it. Incorporate it little by little, continuing to stir, to avoid lumps. Once all the flour is incorporated, add salt and freshly ground black pepper. I didn’t add a lot because I don’t like a too strong flavor, but feel free to add more pepper if desired.

  • Begin preheating the static oven to 356°F (180°C). Now take the luganega sausage, remove the casing, and if you have difficulty, use a knife to help you. Half of the luganega will go into the mixture and the other part will be added on top. Mix everything together. Now take a baking tray and line it with parchment paper, then pour in the mixture. Add the remaining luganega on top. Bake the smacafam for about 30 minutes, until it is golden on the surface.

  • Remove the rustic pie from the oven, let it cool slightly, cut into pieces, and serve. Delicious!

You can store it in the fridge for one day.
